Cavendale Farm is a certified organic family farm in the Eastern Townships that specializes in black garlic.

Their story:
En 1996, Patricia Meurice à acquérir la ferme fondé par ses arrière grands-parents 80 ans plus tôt. En 2021, après une bonne amie l’a introduire a l’ail noir, elle a décidé de se consacrer uniquement à la transformation de l’Allium Sativum d’un produit qui soit utilisé depuis plus de 4000 ans dans la cuisine coréenne.
The black color comes from sugars and amino acids that produce melanoidin during processing.
" After a long and complex process, garlic flesh blackens and turns soft. Its aromatic complexity combines sweet and sour notes and has a more delicate taste than fresh garlic. Its taste is reminiscent of candied figs or prunes, with notes of boletus, balsamic vinegar, tamari, liquorice... it looks like a jujube and is eaten like candy! "
