Cavendale Farm is a certified organic family farm in the Eastern Townships that specializes in black garlic.
Their story:
In 1996, Patricia Meurice acquired the farm founded by her great-grandparents 80 years earlier. In 2021, after a good friend introduced her to black garlic, she decided to devote herself solely to transforming Allium Sativum, a product that has been used for over 4000 years in Korean cuisine.
The black color comes from sugars and amino acids that produce melanoidin during processing.
" After a long and complex process, garlic flesh blackens and turns soft. Its aromatic complexity combines sweet and sour notes and has a more delicate taste than fresh garlic. Its taste is reminiscent of candied figs or prunes, with notes of boletus, balsamic vinegar, tamari, liquorice... it looks like a gummy and is eaten like candy! "
