Lyoca is a freeze-dried fruit and vegetable company in Montreal. It was started in 2020 by Anne Moorehouse.
Freeze drying is a dehydration process that freezes the product, creates a vacuum and dries by sublimation. This method allows the preservation of taste, color and 97% of the nutritional properties without the use of preservatives. Freeze-drying removes 98-99% moisture from food, allowing for long-term preservation. Freeze-drying is a healthy, delicious and long-lasting method of preserving food.
Food waste in Canada contributes nearly 9 million tonnes of greenhouse gases each year. By reducing one ton of food waste, we reduce the equivalent of 4 tons of CO2 emissions. Lyoca freeze-drys unsold and surplus food to reduce the loss of completely edible food.
